Friday Five: April 2018

1 | Keto Cheesecake


One of my 18 for 2018 goals was to bake a cheesecake from scratch. I made this goal before we started following Keto and at first I wasn’t sure if I’d be able to cross this one off my list. But of course, there’s Keto-friendly cheesecake recipes out there, so I ended up baking one for Easter. I used this recipe from Wholesome Yum and it was delicious! The store didn’t have fresh raspberries in stock, so I used blackberries for the topping instead. You guys, it tasted just like a regular cheesecake!


2 | Southwest Companion Pass


I just earned a Southwest Companion Pass! After my most recent credit card balance posted yesterday, I officially had enough points! I’m seriously so excited about this! If you don’t know what the pass is, it’s pretty much exactly what it sounds like. A designated person is able to fly with me for free on any Southwest flight for the rest of the year AND next year!

If you’re wondering how I accumulated so many miles, they’re from the bonuses for signing up for their credit cards. I got 2 credit cards earlier this year when they both offered 50K miles for signing up. Of course I want to stress that this is only a good deal if you’re responsible with credit cards. I use mine for everything and pay off the balance each month so I can earn rewards. Please don’t do this and rack up a bunch of debt! Anyway, I think our first flight will be at the end of May for a graduation near Las Vegas.



3 | Wild Wild Country


Adam and I just finished watching the Netflix docu-series Wild Wild Country. It’s about the Indian “guru” Bhagwan Shree Rajneesh and his followers living at Rajneeshpuram (a commune in rural Oregon in the 1980s). Most of the story focuses on his personal assistant Sheela and the escalating tensions between the group and the surrounding community. The tension leads to the first bioterror attack in the United States, assassination plots, and massive wiretapping. It’s a pretty crazy story and super interesting if you like cult stuff.

I really enjoyed the series, but I don’t think that they focused enough on the Bhagwan’s role in everything. After we finished the series we listened to the episodes of the Cults podcast about Rajneeshpuram and they provide a lot more backstory and a different view of him. I also wished they had interviewed someone from the cult who wasn’t a high ranking person and obviously would have had a different experience than everyone else. After reading this article about what was left out, I really wish they would have interviewed her for the series. I bet her book is really interesting!



4 | Knife Sharpener

A few weeks ago we were at dinner and one of the TVs had an infomercial on for the Bavarian Edge Knife Sharpener…and I ended up buying it. I know, I know…but our knives have gotten pretty dull and it was only $20 on Amazon. I used it on a couple of my favorite knives and it made such a huge difference! It made them so much sharper and so much easier to use! Honestly, I hadn’t realized what a pain a dull knife is compared to a nice, sharp one. It completely transformed dinner prep. I know some of you probably take care of your knives and are like no shit, but for anyone else, BUY THIS!

Of course this is probably only something that you want to use if you have average knives like us. If you have an expensive set, I would probably have them professionally sharpened. But for our $17 colorful Cuisinart set, it’s perfect.

5 | Jelly


This post is getting super long for a Friday Five, so I’ll just end with a few funny pictures of Jelly. She likes to gnaw on the sheets (to relieve her anxiety I think) and sometimes her lips get stuck for a few minutes and it’s hilarious.


Anyone have anything fun planned for the weekend? Adam and I are going on our April date (from our Year of Dates) tomorrow, so I’m looking forward to that. Other than that I’ll probably just work on the guest bedroom for the One Room Challenge.

  4. Ok now that cheesecake looks delicious. It's great that you say it tastes just like ordinary cheesecake too - sometimes keto recipes can taste a little different. Definitely going to be trying that out!

  6. We devoured the Wild Wild Country documentary. I actually went to summer camp there in high school after they turned it into a Christian summer camp and I was fascinated by it.
